I don't think salt works that fast. Anyway, he touched the meat with more than just what he used to pinch the salt. There's definitely bacteria on the grinder.

Here's a tip: put the steak in on one side of the pan. Then, when you flip, the uncooked side gets to hit fresh iron that hasn't been cooled down by the first cooked side. Helps the sear a bit (remember that sear does not lock in juices but only provides flavor).

Yep, washing cast iron is pretty much a terrible thing to do. Soap should never touch it, and the salt trick is really only something to worry about every once in a while. If you've been washing your cast iron, you'll probably need to re-season it (coat it with canola oil, throw it in the oven for an hour and then wipe it clean).

Thank you for adding that nutritionist at the end. I'm sure you get tons of letters from vegetarian fanatics. I was vegan for 3 years almost killed myself still recovering from the damage I did to my body. Now I eat great cuts of organic free range lamb... yum.. meat it does a body good!

Man there's nothing like a nice thick NEW YORK STRIP STEAK oR or perhaps a nice thick PORTER HOUSE and lets not forget a nice thick RIB EYE. The key word here is THICK lol. Perfect choice for a sunday night Dinner with garlic rosemary potatoes and a nice salad on the side Top with a nice glass of Red Wine or for you football fans a nice Keg of cold beer would have you singing your favorite song by half time.Anyway you wnat to cut the cake, I mean steak, do it your way and Enjoy

Alton is definitely one of the more knowledgeable chefs on food network.. good eats is by far my fav. show.. you learn stuff, and get a decent recipe
