Yes it did seem like a lot, but experience has shown me that quite a bit of salt and sugar goes into cooking great tasting food. After tasting, I used to repeat adding salt about four or five times until I got it just right. Now that I know how much it needs, I just throw in a bunch of salt like he did.

I think it should be okay.... the brown remains actually give a very nice aroma to the sauce, as long as the color is light brown, not burned or black.... As the chef said, people grill the meat on the pan first, then add water or wine to make a sauce, at least it's what I do here in Germany :-)
