Sounds tasty! Looks the same but seems to be a little different from the german Blutwurst. I would like to taste some black pudding to know it. But what is a vegetarian black pudding? This is the recipe I used in my shop for "Blackies " 9.25lb. fresh ox blood, 2.5lb. oatmeal, 1.3lb. ground rice, 5.5lb. beef suet. 3 large diced onions, chopped mint leaves. Spices : salt, black pepper, savoury, allspice, cayenne and a dash of nutmeg. Mixed and left to soak overnight, stuffed into beef rounds, cooked for 40 minutes in water at @ 185 dgrees, bloody brilliant !!

thanks for your response. i have tried this twice and it keeps coming out liquidy, and the egg keeps baking seperatly (not as a custard), and when i pour the heavy cream into the surgar it turns to hard toffy and destroys the pan. Excellent recipe! The only thing that I would do differently is this: Place all of the milk, all of the butter, and half of the sugar into the pot to heat up. Place the other half of the sugar, the flour, and the egg yolks into your stand mixer with the whisk attachment and beat the snot out of them. Once all of that comes together into a nice batter consistency, then add that to your pot. It'll help prevent any curdling of the eggs and any lumps with the flour.
