Yes, that is correct. You can totally leave the scales on. I wasn't sure at first, until I was at the market and bought the salmon with scales still on. As I cut the notches, the scales flaked around a bit, but I noticed with Gordon's olive oil style of cooking, it just simply becomes crispy and melts in your mouth, not at all an issue. It actually becomes the tastiest part of the meal - the crispy sides complimenting the soft center. Perfecto!

I have been trying to make crispy salmon skin for some time now! I couldnt figure out how to get the skin to crisp without falling apart. Well, he is right about this one! MAKING THE CUTS is so simple and it actually works. I made this for my husband two days ago and hes still raving about it! I used the rosemary, thyme and parsley like he says for seasoning. Note: you will need a fillet knife to cut through the skin. yummy TRY THIS!!!!

the fish are on their way to their certain death anyway- is it much worse to get shredded alive by a bear- yeah, probably. Somtimes, if the fish is lucky, the bear bites it's brain right out of it's head with one bite- that probably doesn't hurt as much as when they rip it's skin off from tail to head and eat them alive. Nature sucks, don't let people bullshit you. It is mostly suffering and desperation, and always a miserable end. That's why humans should leave wildlife alone.

My brothers co worker is fishing in Alaska, everyone would think this is a fish story but it is true. He caught an estimated 50 lb kingsalmon when an Orca- killer whale bit the fish in half 15 feet from the boat.

In retrospect, I should have mentioned that it is also important to bleed the fish right after catching, otherwise the blood in the fish turns white when the fish is being cooked. With regards to pinbones, using tweezers, is that the correct spelling? you can remove the pin bones but thats too much like work. They come out easy when cooked. Otherwise we can remove them like we do when filleting ling cod. Cutting alongside the pin bones, but then the fillet doesn't look that good. Sonny Covin

You know, the kind of smoke salmon at a bar mitzvah (lox) isn't really that good compared to how northern European style of smoking salmon. Jewish style of smoked salmon tends to be a bit dry and a lot more salty. Northern European style of smoking salmon is more subtle in flavour and the salmon is almost like butter in texture.

I (I'm not the chef) would recommend, if any other fish is used, it should be a rare/medium Tuna. The sweetness and texture of salmon is what makes it works here. There's nothing that can quite replicate it.

I made this today and was really great!!!Really! I have the recipe for bellpepper sauce (very good): two cleand and diced bellpeppers two cleand and diced shalots 1/2 cup white wine 1/2 cup chicken soup fond 1/2 cup sour cream We put shalots and pepper in a pen with little olive oil. We cook this until it becomes soft. Then we add soup and wine and cook until the sauce is reduced by half. Then we add sour creme and mix everything!!!

to be honest he should be using a skinning knife for that not a filleting knife. you can get away with using a filleting knife with small fish but if you look carefully on the thick end of the skin he left a fair bit of salmon on. not down to him, purely because a filleting knife is not designed for skinning fillets that big. but then again im a fishmonger so i would be abit picky about that :p

Another way of removing the skin is to start at the head-end and work towards the tail. Press down on the fish with one hand, and slide the knife between the skin and the meat, then cut all the way back towards the tail, keeping the knife flat and level with the surface of the table, and pressing lightly with the other hand along the way. that's kind of a case in point mate. the etymology of vehicle is latin veHIculum and herb is from latin erbe/herba where the H is silent. HErbs is something uniquely British that began in the late 1800s. I use a similar method with partially frozen salmon. Cut a slit near the tail, flip the fillet so skin is facing up, and peel the skin back. Takes all but a few seconds. You can also use a knife for the same method or any thin object, except don't flip the skin face up, and just push the knife away from you along the fillet. Usually you don't have to cut, just push and it will peel away.

I think it quite humorous how the Britons and Australians choose to say some French words with a proper French pronunciation like "ecoutrement" but then refuse to use French pronunciation on other words like "fillet".
