I've just tried it. Wow! it's the best steak i've ever eaten. Warning: There was some unsuspected amount of smoke when i did put the steak in the pan, the smoke detector did go off, but it was well worth it :P

I agree. This is the only cooking show I watch and then practice what is taught. The education I get from watching one of these shows is amazing. I wish more shows would copy Alton Brown's example.

I don't think salt works that fast. Anyway, he touched the meat with more than just what he used to pinch the salt. There's definitely bacteria on the grinder.

Here's a tip: put the steak in on one side of the pan. Then, when you flip, the uncooked side gets to hit fresh iron that hasn't been cooled down by the first cooked side. Helps the sear a bit (remember that sear does not lock in juices but only provides flavor).
